Stuffed Tomato's
6 small tomato's
1 jar cheese spread
2 T. evaporated milk
2 hard cooked eggs, shelled
1/2 pimento
2 T. capers
lettuce cups
Peel tomato's and remove pulp leave opening in top as small as possible. Sprinkle with salt and pepper, and invert. Let stand 1 hour. Mix cheese with milk and eggs chopped. Fill center of each tomato, cover top with mayo and garnish with pimento and capers. Serve in lettuce cups on large chop plate.
Have I told you.....I love tomato's!! I can remember making tuna stuffed tomato's with my Mom and my Grandma. I also love egg salad, so this recipe is a must! I like the addition of bacon and asparagus sprinkled on top. Make it today!
