lace cookies

Lace Cookies
1 c. sugar
1/2 t. baking powder
1/2 c. melted butter
2 eggs
1 t. vanilla
3 1/2 c. rolled oats
Sift sugar and baking powder together. Beat egg yolks lightly, add melted butter and vanilla, and blend with dry ingredients. Add rolled oats, fold in stiffly beaten egg whites.
Drop batter in balls the size of a marble on a buttered cookie sheet. Flatten with finger tips which have been dipped in water. Bake in heated oven temp 425. Bake 6-8 mins.

I have seen these cookies at many stores and bakeries, tasted these cookies, but never made these cookies. They taste really good, light and crispy, and seem easy to make. Usually I see them around the holidays, but really you could make them any time. I am putting them on my list of things to make. I have also seen them sandwiched together with frosting or cream.
A little known fact about my Grandma Bea is that she had 3 sisters and 1 brother. Her father was a Lutheran Pastor. I had the privilege of knowing her Dad, but not her Mother. He was a wonderful man and father. She admired and loved him so. Her brother was the last one to pass, just over a year ago.
