english trifle
Recipe 39
English Trifle
1 lrg. can fruit cocktail, drained
1/4 c. sherry
1 pkg. french vanilla instant pudding
2 sliced bananas
1-2 pkg. frozen raspberries, drained
2 sm. pkgs. raspberry jello
1 small pound cake
whipped cream or cool whip
Slice cake in 1/2 " slices. Line bottom & halfway up sides of bowl with cake. Sprinkle cake with sherry. Spread cake with a layer of fruit cocktail, bananas & raspberries. Mix jello, according to instructions and pour over fruit and cake, covering all. Refrigerate until well set. Mix pudding per instructions and pour over jello mixture. When pudding is set, cover all with whipped cream. Serve!

stuffed tomatos

Stuffed Tomato's
6 small tomato's
1 jar cheese spread
2 T. evaporated milk
2 hard cooked eggs, shelled
1/2 pimento
2 T. capers
lettuce cups
Peel tomato's and remove pulp leave opening in top as small as possible. Sprinkle with salt and pepper, and invert. Let stand 1 hour. Mix cheese with milk and eggs chopped. Fill center of each tomato, cover top with mayo and garnish with pimento and capers. Serve in lettuce cups on large chop plate.
Have I told you.....I love tomato's!! I can remember making tuna stuffed tomato's with my Mom and my Grandma. I also love egg salad, so this recipe is a must! I like the addition of bacon and asparagus sprinkled on top. Make it today!

pear pie

Peach Pie
2 cans Bartlett pears
4 T. butter melted
3 T. flour
1/2 c. brown sugar
1/4 c. pear juice
1 t. lemon juice
dash cinnamon
Combine butter, flour, sugar syrup, lemon and cinnamon. Cook until thick and clear. Place pears in shell and cover with sauce. Top with whip cream.
I have not had a pear in such a long time. I used to love them out of the can growing up....so I would probably love this pie. It is a perfect pear pie!
One of the items I have of my Grandma's is a wooden toothpick holder. Like her recipe box, and most of her things, it has been painted.....a few times! I love it! It's not something you see, and I don't use it, but I like to look at it. Below is a picture of my Grandma Bea.

oatmeal cookies

Oatmeal Cookies
1 c. shortening
1 c. sugar
1 c. brown sugar
2 eggs
1 t. vanilla
1 1/2 c. flour
1 t. salt
1 t. baking soda
3 c. oats
1 c. chopped walnuts
Cream shortening and sugar. Mix eggs and vanilla. Sift flour salt and soda. Fold into creamed mixture. Stir in oats and nuts. Roll into small balls and place on greased cookie sheet. Flatten with fork. Bake at 350 degrees for 10-12 minutes or roll and refrig.
I love the smell of warm oatmeal cookies!! Cozy up to a fire, or get under the covers and watch a good movie with your cookies. Perfect for a cold night. Crispy and chewy all at the same time.
This may sound weird, but I can still remember what my Grandma Bea smelled like. Even without perfume, everyone has a "scent", and I remember hers. I think I am one of those very sensitive smell people. I was in a movie theater over the weekend. I could smell someone sitting near me, and it grossed me out. It smelled like greasy hair. My sensitive nose is only good when there are good scents, otherwise it can literally make me ill!!

Lace Cookies
1 c. sugar
1/2 t. baking powder
1/2 c. melted butter
2 eggs
1 t. vanilla
3 1/2 c. rolled oats
Sift sugar and baking powder together. Beat egg yolks lightly, add melted butter and vanilla, and blend with dry ingredients. Add rolled oats, fold in stiffly beaten egg whites.
Drop batter in balls the size of a marble on a buttered cookie sheet. Flatten with finger tips which have been dipped in water. Bake in heated oven temp 425. Bake 6-8 mins.

I have seen these cookies at many stores and bakeries, tasted these cookies, but never made these cookies. They taste really good, light and crispy, and seem easy to make. Usually I see them around the holidays, but really you could make them any time. I am putting them on my list of things to make. I have also seen them sandwiched together with frosting or cream.
A little known fact about my Grandma Bea is that she had 3 sisters and 1 brother. Her father was a Lutheran Pastor. I had the privilege of knowing her Dad, but not her Mother. He was a wonderful man and father. She admired and loved him so. Her brother was the last one to pass, just over a year ago.

Quick Dessert
Here's a quick dessert which make a delicious climax to a meal. Simply fold chilled canned apple slices into cool vanilla pudding, made from a mix. Place in sherbet glasses and top with macaroon crumbs.
Love this little recipe! And so true. If you mix vanilla pudding with anything, people usually love it. This recipe would taste like a mini apple pie. You could do a pumpkin, cherry, blueberry version of it using graham crackers crumbs! Yum!
The sherbet glasses reminded me of my grandma. She had beautiful glasses and dishes. She loved blue. I was lucky enough to get some of her blue glasses. I rarely use them, I just like to look at them, so many memories!

My favorite Salad Dressing
1 can tomato soup
1/2 c. sugar
1 1/4 c. salad oil
2 t. salt
1/2 t. mustard
2 T. vinegar
2 T. A-1 sauce
1 grated onion

Beat 3 minutes.

Sorry won't be making this......not a fan of tomato soup. I am not sure what they were going for with this, but it doesn't sound very good. :( Maybe back then, store bought dressings were few and far between??
A memory just popped in my head.....Catalina dressing! Grandma always used that for her salad dressing. I think it kind of reminds me of this recipe. I love Catalina, so sweet! Of course she liked that with her sweet tooth!

Ham Loaf
1 lb. ground beef
1 lb. ground ham
1 lb. ground pork
1 c. oat meal
1 egg
1 c. of milk or tomato juice
Mix and bake 1 1/2 hrs.

After you fill up on meatloaf you can make ham loaf. I This is one of those recipes I have never heard of. I don't remember my Grandma ever making this, nor my Mom. It sounds very meaty, and heavy, but possibly a really good meal. Not a lot of seasoning, maybe add a few things to it.

Meat Loaf
2 lbs. lean ground beef
1 c. oats
2 eggs
1/2 c. catsup
1 small onion, chopped
1 t. salt
1/2 t. pepper
Mix all together. Put in loaf pan at 350 degrees for 1 hour & 15 minutes. Let sit before serving.
My family loves meatloaf. The nice part about making meatloaf is you can tweak the recipe to your liking, even throw in vegetables your kids won't detect. I make mine with bread crumbs, I have never used oats. I think it is very important to get really lean meat, otherwise it is way too greasy. Also top it with a mix of A-1 sauce and ketchup and cook for 10 mins for a nice glaze on top!
My Grandpa loved hamburgers, so does my Dad. This is a nice change to the hamburger. I bet my Grandma made this a lot. Served with mash potatoes! Yum!

Brown Bread
1 c. flour
1 c. graham flour
1 c. milk
2/3 c. molasses
1 t. soda solved in water or milk
1/2 t. salt
1 T. melted shortening
2 eggs
Mix then steam for 2 hours in pudding pan, put in oven for 1/2 hour.
I love bread. I know we are supposed to, but I do. I do admit, lately, I have cut some of it out in the hopes that it will help in some weight loss. I used to own a bread maker. Remember when that was the big thing! Flash back!! I actually think it is still in our basement. My parents had one, then Heidi and I each got one. I think it took about an hour or so, but it was so good! Warm bread!! yes! Then the Atkins diet told us bread was bad, and haven't made it since!

Snow-Whirl Chocolate Roll
6 T. sifted Swans Down cake flour
6 T. Baker's breakfast cocoa
1/2 t. calumet baking powder
1/4 t. salt
3/4 c. sifted sugar
4 egg whites, stiffly beaten
4 egg yolks, beaten until thick, lemon colored
1 t. vanilla
Sift flour once, measure, add cocoa, baking powder, and salt, and sift together three times. Fold sugar gradually into egg whites. Fold in eggs yolks and vanilla. Fold in flour gradually. Pour into a greased pan 15 x 10 inches, lined with greased paper, or tinfoil, and bake in hot oven (400 degrees) 13 minutes.
Quickly cut off crisp edges of cake. Turn from pan at once onto cloth covered with powdered sugar. Remove paper or foil. Spread Seven Minute frosting over cake and roll. Wrap in cloth until cool. Frost if desired.
Seven Minute Frosting
2 egg whites, unbeaten
1 1/2 c. sugar
5 T. water
1 1/2 t. light corn syrup
1 t. vanilla
Combine egg whites, sugar, water, and corn syrup in top of double boiler beating with rotary beater until blended. Place over boiling water and beat for 7 min. or until it stands in peaks. Remove from boiling water; add vanilla and beat until thick enough to spread.

I don't think if I tried this recipe my rolled cake would look this good, it would definitely take practice. It's a large, made from scratch version of the swiss cake roll my family loves when craving junk food.
I love that this recipe was typed. Maybe she had to make several copies of it, or she was trying to get her recipe cards looking nicer...hhmmm. I remember using a type writer for school, typing papers. Wow, I suddenly sound very old. We had one that made your fingers hurt when you were done.
My Grandma in her later years only made angel food cake. I thought by now I would run across the recipe for it, but I am thinking she probably just used a cake mix. Even Grandma started using the convenient way to cook.

vanilla pudding

Vanilla Pudding
1/3 c. sugar
1/4 c. cornstarch
1/8 t. salt
2 2/4 c. milk
Mix together sugar and cornstarch. Gradually stir in milk. Boil over med heat stirring constantly. Boil 1 min. Stir in 2 T. marg. and 1 t. vanilla.
For chocolate- increase sugar 2/3 c., add 3 T. unsweetened cocoa with cornstarch.
Remove from heat, chill.
Smooth vanilla pudding...nothing better...well maybe a vanilla malt! I would love to be able to say, yep I made that from scratch. I think it would be so satisfying. I am not a cook, or a baker. I wish I was. I have become inspired by these recipes. Now I need to find the time to just do it.
As I was looking through the boxes today, I think it is so amazing how old some of these cards are. 40 + years or more. I feel the history. I feel my Grandma, on every little piece of paper.

I love this and had to include it her posts. This is the evidence of what her favorite things were to make and how much she loved to plan a party. I had forgotten all about the egg rolls!!! She must have added the "last" Birthday Party later. She has so many pieces of paper in her boxes that are not recipes....love that! She loved my Grandpa Milo so much. He was taken from us way to early.

Corn Starch Meringue Custard
1 qt. milk
2 T. cornstarch
3 eggs beaten, separated
1/4 c. sugar
1 t. vanilla
6 T. powdered sugar
Scaled milk, stir in cornstarch moistened in a little bit of water. Let cool until it becomes thick and smooth. Stir. Separate eggs, beat yolks until thick and smooth. Add sugar. Stir these into thickened milk. Cook all together about 1 min. Add vanilla. Beat whites and add powdered sugar. Brown in oven- 350 degrees

This recipe is written by Sonni, my aunt. Doesn't it sound so good. Yum, like a creamy pudding. This would be great at a tea party. You can also add lemon to it for a great citrus taste. My grandma loved her desserts. She had a sweet tooth, and never felt bad making cakes or cookies! I like her style. Live it up once in awhile. Bake something, share it and move on. Fresh Peach Pie
2 c. powdered sugar
1/2 c. butter
2 egg yolks
Fold in 2 egg whites
3 large peaches
1/2 pint cream
Chill several hours or overnite
I thought this recipe was perfect after the pie crust recipe. We are set to make a pie! Does peach pie sound southern to you, it does to me. Sort like something they ate in the movie Steel Magnolias. I think in the recipes where there are not a lot of detail on how to put it all together, you just put it all in and beat it together, that is my guess!
Like I said, I do not make pies, but I have a great Southern Living pie plate that I use for other things, like hot dips and desserts. I just may have to try a pie this winter...

I don't remember my Grandma ever making pies, but I love the recipe, short and to the point. She wrote in the corner, Bernice, my great Grandmother, her Mother in law. When you think about how inexpensive a crust is to make, you can see why it was a popular dessert to make. I can imagine Bernice showed her a favorite pie recipe. I know how important it was to her to be a great housewife and to make everyone happy, and she probably learned a lot from her Mother and Mother in law,
I have never been much of a pie person, it is something about the mushy fruit that bothers me. I do however love pecan pie and pumpkin pie.

Apple Sauce
6 apples
1/4 c. water
1/2 c. sugar
pinch salt
This recipe is so simple, but it reminds me so much of Grandma Bea. She always had applesauce in her kitchen. She served it when she made pork chops. "Pork chops, rice and applesauce!" A little family joke. I had this a lot growing up in our house. One of my Dad's favorites. I would add cinnamon to it or a little fresh ginger.
